Corner Bakery Cafe started in Chicago in 1991 and has since expanded into a national franchise. The chain is known for its pastries, breads, breakfast dishes, gourmet sandwiches, and salads, served in a casual environment. Some of its signature dishes include the Asian wonton salad (with roasted chicken, edamame, cilantro, crispy wontons, napa cabbage, and ginger soy dressing), the Anaheim scrambler (eggs scrambled with applewood-smoked bacon, tomatoes, green onions, cheddar cheese, and topped with avocado), chilled Swiss oatmeal (European muesli made with rolled oats, fresh green apples, bananas, currants, dried cranberries, low-fat yogurt, and skim milk) and a Reuben panini (lean corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing).
