Texas Blues features grilled, smoked, fried, and barbeque meat dishes such as ribs, beef brisket, pulled pork, barbeque chicken, and southern fried catfish. "Texas Barnyard Plates" put a spin on Rochester-style plates, featuring a homemade hot meat sauce. Other options include chili, wings, nachos, burgers, and sides such as corn on the cob, mac and cheese, rice and beans, and candied yams. Texas Blues' "signature sammies" are served on fresh rolls with dill pickles, including Carolina pulled pork, Texas wildfire (meat, cheddar, jalapeno, and "devil sauce"), Texas stampede (meat, grilled onions and mushrooms, Swiss, and choice of sauce), and Texas monsoon (pork and beef brisket with coleslaw, cheddar, peppered bacon, and choice of sauce). Lentil veggie burgers and portobello rolls are also available.
